Maple Bacon Yam Poutine

Poutine made with Mae’s Maple Garlic and Maple bacon. A Canadian classic uniquely made.

Ingredients
  

  • 2 yams
  • 2 tbsp Mae’s Seasonings Maple Garlic
  • 2 - 3 tbsp olive oil
  • 6 pieces bacon diced
  • 1 tbsp maple syrup
  • 5 oz cheese curds
  • 3 green onions thinly sliced
  • Gravy:
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups stock chicken, beef or vegetable
  • 1 tsp granulated garlic
  • 1 tsp granulated onion
  • 1 tsp kitchen bouquet

Instructions
 

  • Preheat oven to 400 F. Cut yams lengthwise into French Fries and toss with Mae’s Maple Garlic and olive oil. Bake in preheated oven for 20 - 25 minutes.
  • Meahwhile, make gravy: in a medium saucepan on medium heat, melt butter then add in flour. Let cook for 1 - 2 minutes. Slowly add in stock until thickened. Add in garlic, onion, and kitchen bouquet*. Taste and adjust seasonings if necessary.
  • Bacon: in a frypan over medium - high heat add bacon and fry until cooked. Add maple syrup and cook just until syrup is cooked into the bacon, about 1 minute and set aside.
  • Assemble: on a large plate place yam fries and top with cheese curds, gravy, bacon and green onions.
  • * You can find kitchen bouquet in the spice aisle of your grocery store.
