Mexican Beef Pie
This Mexican inspired dish is made with Mae’s Chipotle Cocoa Rub and Chili & Taco Seasoning. The topping is a cornmeal cheddar crust. Perfect when paired with a green salad with a chipotle lime dressing.
Ingredients
- 1 onion diced
- 6 cloves garlic minced
- 1 lb lean ground beef
- 1 tbsp Mae’s Seasonings Chili & Taco
- 1 tbsp Mae’s Seasonings Chipotle Cocoa
- 1/4 tsp salt
- 1 can 28 oz diced tomatoes
- 1 red bell pepper diced
- 1 can 14 oz red kidney beans
- CORNMEAL TOPPING:
- 3/4 cup cornmeal
- 1/2 cup flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp sugar
- 1 cup shredded Cheddar cheese
- 3/4 cup buttermilk
- 1 egg
- 1 tbsp oil
Instructions
- Cook onion and garlic in oil until lightly browned. Then add in ground beef, Mae’s Chipotle and Mae’s Chili & Taco Seasoning. Cook until beef is cooked. Stir in tomatoes, breaking tomatoes up a bit.
- Preheat oven to 450 F. Cook on low uncovered for 20 minutes, stirring occasionally. Stir in red bell pepper.
- Arrange half of mixture in a 2L casserole dish. Top with half can of beans. Repeat layers and set aside.
- Meanwhile in a large bowl combine cornmeal, flour, baking soda, salt and sugar. Stir in cheese. In small bowl stir together buttermilk, egg and oil. Add buttermilk mixture to cornmeal mixture, stir just to combine.
- Spread cornmeal topping evenly over beef / bean mixture. Bake 20 minutes or until browned.
- Serve with sour cream if desired.
