Blackened Cajun Soup
Soup made with Blackened Cajun Chicken. This has great Louisiana flavour. This soup has the typical Cajun ingredients (onions, celery and bell peppers) This is great served with cornbread.
Ingredients
- 2 large chicken breasts cut in half horizontally to make 4 fillets
- olive oil
- 2 - 4 tbsp Mae's Seasonings Cajun Blackened Rub or Blazin Cajun Seasoning
- 2 onions thinly sliced
- 1/2 head garlic minced
- 3 celery ribs coarsely chopped
- 3 red or green red bell pepers coarsely chopped
- 1 can tomatoes, undrained (28 oz)
- 10 cup chicken stock
- 1 cup corn
Instructions
- Rub Mae’s Cajun on the chicken pieces.
- In a medium cast iron or frypan heat oil on medium – high heat. Cook chicken until cooked about 5 minutes per side until no longer pink. Set aside then dice up when cooled.
- In a large pot, saute onions until lightly browned. Then add in garlic and saute for 1 more minute.
- Then add in celery, peppers, tomatoes and chicken stock.
- Simmer for about 20 minutes until vegetables are cooked.
- Add in corn and chicken and simmer for another 10 minutes.
- Great served with cornbread.
