Chipotle Chicken Quesadilla
A very easy Quesadilla recipe using our Chipotle Cocoa Rub. A very easy weeknight dinner. Kids also love these. Just reduce the Chipotle if they don't like a lot of spice. Pair this with a salad for a complete meal.
Ingredients
- 3 tbsp olive oil
- juice from 1/2 lime
- 1 - 2 tbsp Mae’s Seasonings Chipotle Cocoa
- 4 garlic cloves minced
- 2 boneless skinless chicken breasts thinly sliced
- 1 red onion thinly sliced
- 1 red bell pepper thinly sliced
- Olive oil
- 2 green onions thinly sliced
- 2 cups Monterey Jack Cheese shredded
- Sour cream and salsa
- 4 tortilla shells
Instructions
- In a medium bowl stir together olive oil, lime juice, Mae’s Chipotle Cocoa Rub and garlic cloves. Mix in chicken breasts and marinate at least 3 hours.
- In a medium frypan, over medium heat, sauté onions, and red pepper until lightly browned and set aside.
- Cook chicken about 5 minutes until cooked and no longer pink.
- In a large frypan over medium heat, heat some oil up. Once heated place a tortilla shell and top with Monterey Jack cheese, onions and peppers, chicken and green onions.
- Cook until shell is browned, about 5 minutes.
