Chipotle Chicken Quesadilla

A very easy Quesadilla recipe using our Chipotle Cocoa Rub. A very easy weeknight dinner. Kids also love these. Just reduce the Chipotle if they don't like a lot of spice. Pair this with a salad for a complete meal.

Ingredients
  

  • 3 tbsp olive oil
  • juice from 1/2 lime
  • 1 - 2 tbsp Mae’s Seasonings Chipotle Cocoa
  • 4 garlic cloves minced
  • 2 boneless skinless chicken breasts thinly sliced
  • 1 red onion thinly sliced
  • 1 red bell pepper thinly sliced
  • Olive oil
  • 2 green onions thinly sliced
  • 2 cups Monterey Jack Cheese shredded
  • Sour cream and salsa
  • 4 tortilla shells

Instructions
 

  • In a medium bowl stir together olive oil, lime juice, Mae’s Chipotle Cocoa Rub and garlic cloves. Mix in chicken breasts and marinate at least 3 hours.
  • In a medium frypan, over medium heat, sauté onions, and red pepper until lightly browned and set aside.
  • Cook chicken about 5 minutes until cooked and no longer pink.
  • In a large frypan over medium heat, heat some oil up. Once heated place a tortilla shell and top with Monterey Jack cheese, onions and peppers, chicken and green onions.
  • Cook until shell is browned, about 5 minutes.
