Beef Enchiladas

Enchiladas made with Mae's Seasonings Chili & Taco. Top with lettuce, and tomatoes. Great recipe for a Mexican Inspired Meal.

  • Canola oil
  • 1 onion diced
  • 6 garlic cloves minced
  • 1 lb lean ground beef
  • 1 large red bell pepper diced
  • 1 bunch green onion diced
  • 1can 127 ml green chilies
  • 1 can 14 oz tomato sauce
  • 2 tbsp Mae’s Seasonings Chili & Taco
  • 1 tsp Granulated Onion
  • 1 tsp salt
  • 10 flour tortillas
  • 2 cups shredded Cheddar cheese
  • 2 cups salsa
  • Sour cream
  • Shredded lettuce
  • Diced tomatoes


  • On medium - high heat sauté onions and garlic in oil until lightly browned.
  • Add in ground beef and cook until no longer pink.
  • Add in red bell peppers, green onion, green chilies, tomato sauce, Mae’s Chili & Taco Seasoning, granulated onion and salt.
  • Cook on low for 20 minutes.
  • Preheat oven to 450 F.
  • In each tortilla place 1/3 cup of the beef mixture in the filling and roll up. Place seam side down in baking dish.
  • Cover with salsa and cheddar cheese.
  • Bake for 20– 25 minutes until cheese is bubbly Serve with sour cream, lettuce, and diced tomatoes
