Beef Enchiladas
Enchiladas made with Mae's Seasonings Chili & Taco. Top with lettuce, and tomatoes. Great recipe for a Mexican Inspired Meal.
Ingredients
- Canola oil
- 1 onion diced
- 6 garlic cloves minced
- 1 lb lean ground beef
- 1 large red bell pepper diced
- 1 bunch green onion diced
- 1can 127 ml green chilies
- 1 can 14 oz tomato sauce
- 2 tbsp Mae’s Seasonings Chili & Taco
- 1 tsp Granulated Onion
- 1 tsp salt
- 10 flour tortillas
- 2 cups shredded Cheddar cheese
- 2 cups salsa
- TOPPINGS:
- Sour cream
- Shredded lettuce
- Diced tomatoes
Instructions
- On medium - high heat sauté onions and garlic in oil until lightly browned.
- Add in ground beef and cook until no longer pink.
- Add in red bell peppers, green onion, green chilies, tomato sauce, Mae’s Chili & Taco Seasoning, granulated onion and salt.
- Cook on low for 20 minutes.
- Preheat oven to 450 F.
- In each tortilla place 1/3 cup of the beef mixture in the filling and roll up. Place seam side down in baking dish.
- Cover with salsa and cheddar cheese.
- Bake for 20– 25 minutes until cheese is bubbly Serve with sour cream, lettuce, and diced tomatoes
