Chicken Fajita Soup
The chicken is cooked in the broth for very tender chicken. This soup is made with Mae's Chili & Taco Seasoning. Serve with some garlic toast or corn bread for a complete meal.
Ingredients
- Olive oil
- 1 onion coarsely chopped
- 3 red and/or orange bell peppers chopped
- 6 cloves garlic minced
- 1 can 28 oz diced tomatoes
- 8 cups chicken broth
- 2 tbsp Mae’s Seasonings Chili & Taco
- 6 bone in chicken thighs
- 2 cans 398 ml black beans
- 2 cups corn
- 2 tbsp lime juice
Instructions
- In a large pot, on medium - high sauté onion, peppers and garlic until lightly browned. Add in diced tomatoes, chicken broth and Mae’s Chili & taco seasoning. Stir and adjust seasonings if needed.
- Add in raw chicken thighs and cook on medium for 1 hour. Remove cooked chicken from soup and shred. Add in black beans, corn, lime juice, and chicken and cook on low for 10 minutes.
- Serve with crushed tortilla chips.
