Chicken Enchiladas
Enchiladas made with Mae's Seasonings Chili & Taco Seasoning. Serve with a green salad for a complete meal.
Ingredients
- ½ cup cream cheese softened
- ½ cup sour cream
- 1 ½ cups thick salsa
- 1 tbsp Mae’s Seasonings Chili & Taco
- ½ tsp salt
- 3 cups diced cooked chicken breast
- 2 cups shredded Cheddar cheese
- 1/3 cup green onions
- 10 flour tortillas
- sour cream optional
Instructions
- Preheat oven to 350 F. In a medium size bowl, stir cream cheese with sour cream, ½ cup salsa, Mae’s Chili and Taco and salt. Mix in chicken, 1 cup of the cheese and green onions.
- On each tortilla, spread about 1/3 cup of the chicken cheese mixture and roll up. Place seam side down in a greased baking dish. Pour remaining cup of salsa over enchiladas. Sprinkle with remaining cheese.
- Bake 15 - 20 minutes or until cheese melts. Serve with sour cream.
