Mexican Rice Bowl
Vegetarian Rice Bowl made with our Chipotle Cocoa Rub. The black beans add the protein in this dish. You won't even miss the meat since this is so full of flavours. But this dish would go excellent with chicken if you would like some extra protein.
Ingredients
- olive oil
- 1 onion diced
- 4 - 6 garlic cloves minced
- 2 cups corn niblets
- 1 can (15 oz) black beans
- 2 green onions chopped
- 1 tbsp Mae’s Chipotle Cocoa Rub
- 1 large red or orange bell pepper chopped
- 1/2 cup grated cheddar cheese
- 1 cup uncooked rice cooked
- Salsa and sour cream
Instructions
- Sauté onion and garlic until lightly browned in some olive oil.
- Then add in corn, black beans, green onions, and Mae’s Chipotle Cocoa Rub.
- Simmer for about 10 minutes.
- Serve with rice, peppers, and cheese. Top with salsa and sour cream.
