Chipotle Beef and Pepper Soup
Slow cooked beef with bell peppers and onions. This is made using our Chipotle Cocoa Rub with the beef and in the broth of the soup. The Chipotle Cocoa makes this a very flavourful soup. This can be enjoyed anytime of the year since the beef is cooked in a slow cooker.
Ingredients
- Olive oil
- 2 red onions thinly sliced
- 3 red bell peppers thinly sliced
- 6 - 8 cloves garlic minced
- 3 cups corn kernels
- 8 cups beef broth
- 2 tbsp hot sauce
- 1 tbsp Mae’s Seasonings Chipotle Cocoa
- 4 cups pulled beef
- PULLED BEEF:
- 2 - 4 lbs beef rib roast
- 1 tbsp Mae’s Seasonings Chipotle Cocoa
- 2 tbsp lime juice
- 2 tbsp olive oil
Instructions
- PULLED BEEF: Combine Chipotle Cocoa Rub, lime juice and olive oil and brush beef roast with this mixture. In slow cooker, put in beef broth then the beef roast. Cook on low for 6 - 8 hours until very tender. With 2 forks pull apart. Set aside for soup.
- SOUP: In large pot, sauté onions, peppers and garlic until lightly browned. Add in corn until warmed up.
- Add in beef broth, hot sauce, Mae’s Chipotle Cocoa and pulled beef.
- Cook on medium - low for 10 - 20 minutes. Taste and season to taste.
