Baked Potato Bacon Soup

Creamy Potato Soup made with Mae’s Garlic Lovers Dip Mix. This is a excellent comfort food perfect for colder months. Pair it with a salad for a full meal. You could also top with cheddar cheese if you like. Read down below for vegan version.

Ingredients
  

  • 1 onion diced
  • 1 bunch green onion diced
  • 1/2 pkg bacon diced
  • 4 - 6 potatoes baked, then cooled and cubed
  • 3 cups chicken stock
  • 1 1/2 cups light cream (cremo)
  • 2 tbsp Mae's Seasonings Garlic Lovers
  • 2 tbsp all purpose flour
  • 2 tbsp canola oil
  • 3/4 cup sour cream
  • salt and pepper

Instructions
 

  • Sauté onion and green onion until transparent; then add in bacon. Cook until bacon is thoroughly cooked.
  • In a large stock pot add cubed baked potatoes, chicken stock, cream, Mae’s Garlic Lovers and bacon/onion mixture. Heat on medium - high until hot.
  • Mix together roux: flour and oil. It should be a thick mixture. Mix in soup until soup thickens. Repeat roux if necessary.
  • Turn off soup and whisk in sour cream and season with salt and pepper.
  • **Vegan: You can also make this vegan by omitting the bacon and replacing the chicken stock with vegetarian stock. And replace the cream with coconut milk**
