Chipotle Chicken Cobb Salad

Mexican Inspired Cobb Salad using our Chipotle Cocoa Rub. A very quick and easy meal to make in the summer. You can either grill the chicken on the BBQ or in a indoor grill pan to get those delicious marks on the chicken. You get double chipotle. Chipotle is in the chicken and in the easy Chipotle dressing.

  • Olive oil
  • 1 tbsp Mae’s Seasonings Chipotle Cocoa
  • 2 large chicken breasts cut in half horizontally to make 4 fillets
  • 1/2 head Romaine lettuce roughly chopped
  • 1/2 cup Cherry tomatoes halved
  • 1/2 cup cooked corn
  • 1/2 cup black beans rinsed
  • 1 cup cubed cheddar cheese cubed
  • 2 green onion stalks finely chopped
  • 2 Eggs hard boiled, sliced in half
  • 6 pieces bacon cooked and chopped
  • 1 ripe avocado thinly sliced
  • Creamy Chipotle Lime Dressing:
  • ½ cup sour cream
  • ¼ cup mayo
  • 1 tbsp Mae’s Chipotle Cocoa Rub
  • Juice from 1/2 lime


  • On a small plate, place the 4 chicken fillets and rub with olive oil and Mae’s Chipotle Cocoa Rub. Let sit while you make the dressing.
  • Mix together sour cream, mayo, Mae’s Chipotle Cocoa Rub and lime juice.
  • Cook chicken on the BBQ or in a indoor grill pan, about 5 minutes per side or until cooked. Set aside then slice up for salads.
  • Place romaine on 2 large plates and top with tomatoes, corn, black beans, cheese, green onions, eggs, bacon, chicken, and avocado.
  • Serve with the smoky chipotle dressing. Makes 2 entrée sized salads.
