Chipotle Chicken Cobb Salad
Mexican Inspired Cobb Salad using our Chipotle Cocoa Rub. A very quick and easy meal to make in the summer. You can either grill the chicken on the BBQ or in a indoor grill pan to get those delicious marks on the chicken. You get double chipotle. Chipotle is in the chicken and in the easy Chipotle dressing.
Ingredients
- Olive oil
- 1 tbsp Mae’s Seasonings Chipotle Cocoa
- 2 large chicken breasts cut in half horizontally to make 4 fillets
- 1/2 head Romaine lettuce roughly chopped
- 1/2 cup Cherry tomatoes halved
- 1/2 cup cooked corn
- 1/2 cup black beans rinsed
- 1 cup cubed cheddar cheese cubed
- 2 green onion stalks finely chopped
- 2 Eggs hard boiled, sliced in half
- 6 pieces bacon cooked and chopped
- 1 ripe avocado thinly sliced
- Creamy Chipotle Lime Dressing:
- ½ cup sour cream
- ¼ cup mayo
- 1 tbsp Mae’s Chipotle Cocoa Rub
- Juice from 1/2 lime
Instructions
- On a small plate, place the 4 chicken fillets and rub with olive oil and Mae’s Chipotle Cocoa Rub. Let sit while you make the dressing.
- Mix together sour cream, mayo, Mae’s Chipotle Cocoa Rub and lime juice.
- Cook chicken on the BBQ or in a indoor grill pan, about 5 minutes per side or until cooked. Set aside then slice up for salads.
- Place romaine on 2 large plates and top with tomatoes, corn, black beans, cheese, green onions, eggs, bacon, chicken, and avocado.
- Serve with the smoky chipotle dressing. Makes 2 entrée sized salads.
