Chicken Parmesan
Chicken using Mae’s Smoked Marinara. Breaded in a mixture of panko and parmesan. This is very juicy chicken. Pair it with a salad for a full entrée. You can also make this lower carb by replacing the pasta with spaghetti squash noodles.
Ingredients
- 2 large eggs
- salt and pepper
- 3 large chicken breasts halved horizontally to make 6 fillets
- 1 1/2 cups panko breadcrumbs
- 1/2 cup shredded Parmesan cheese
- 1 tsp granulated garlic
- 1 tbsp Mae's Seasoning Smoked Marinara
- 1 jar marinara sauce or use Mae's recipe
- 1 1/2 cups grated Mozzarella cheese
- 1/4 cup shredded Parmesan cheese
- pasta or spaghetti squash *noodles*
Instructions
- Preheat oven to 400 F.
- Whisk together eggs and salt and pepper in a shallow bowl.
- Mix together panko, parmesan, garlic and Mae’s Smoked Marinara in another shallow bowl.
- Dip chicken into egg mixture then into the panko mixture.
- Heat oil in a large frypan over medium – high heat until hot. Fry chicken until golden and crispy, about 4 – 5 minutes per side.
- Place chicken on a baking dish and top each breast with about ¼ cup sauce, mozzarella and parmesan. Sprinkle with Mae’s Smoked Marinara.
- Bake for 15 – 20 minutes or until cheese is bubbling and melted and the chicken is cooked through.
- Serve over pasta or spaghetti squash *noodles* for low carb.
