Cook onion and garlic in oil until lightly browned. Then add in ground beef, Mae’s Chipotle and Mae’s Chili & Taco Seasoning. Cook until beef is cooked. Stir in tomatoes, breaking tomatoes up a bit.
Preheat oven to 450 F. Cook on low uncovered for 20 minutes, stirring occasionally. Stir in red bell pepper.
Arrange half of mixture in a 2L casserole dish. Top with half can of beans. Repeat layers and set aside.
Meanwhile in a large bowl combine cornmeal, flour, baking soda, salt and sugar. Stir in cheese. In small bowl stir together buttermilk, egg and oil. Add buttermilk mixture to cornmeal mixture, stir just to combine.
Spread cornmeal topping evenly over beef / bean mixture. Bake 20 minutes or until browned.
Serve with sour cream if desired.
