Pumpkin Loaf
Pumpkin loaf made with Mae's Maple Pumpkin Spice. Perfect for the fall with pumpkin spiced lattes.

- 2 cups all purpose flour
- 6 tsp Mae's Seasonings Maple Pumpkin or Gingerbread Spice
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup pure pumpkin not pumpkin pie filling
- 1 cup brown sugar packed
- 1/2 cup pure apple juice
- 2 large eggs
- 2 tbsp olive oil
- 1 tsp vanilla extract
Preheat oven to 350 F. Sift together flour, Mae's Maple Pumpkin or Gingerbread, baking powder, baking soda and salt into medium bowl.
Combine pumpkin, brown sugar, apple juice, eggs,, oil and vanilla in large bowl; stir well. Stir in flour mixture just until moistened.
Spoon into a greased 9 X 5 inch loaf pan. Bake for 65 minutes or until wooden pick inserted in center comes out clean.
Cool in pan on wire racks for 10 minutes; remove to wire rack to cool completely
