Cashew Crusted Chicken

Chicken made with peach jam and Mae’s Garlic Lovers. This is a great juicy chicken made with healthy fats (cashews)  Pair it with some cooked veggies for a low carb meal.

Ingredients
  

  • 1/2 cup peach jam
  • 2 tbsp Dijon mustard
  • 2 tbsp Mae's Seasonings Garlic Lovers
  • 1 tsp ground ginger
  • 2 large chicken breasts cut in half horizontally
  • 3/4 cup crushed cashews

Instructions
 

  • Preheat oven to 375 F.
  • In a small saucepan, mix together peach jam, Dijon, Mae’s Garlic Lovers, and ginger. Remove from heat once warmed.
  • On 1 plate place some of the jam mixture. On another plate, place the cashews on it. Dip the chicken breasts in the jam mixture then in the cashews.
  • Transfer to a baking dish and bake for about 20 minutes or until no longer pink.
  • Serve with the remaining jam mixture.
